  • 1 lb ground chicken (preferably lean)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 cup finely grated carrot
  • 1/4 cup almond flour
  • 1 large egg
  • 2 tbsp tomato paste
  • 1 tbsp coconut aminos
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 2 tbsp sugar-free ketchup mixed with 1 tsp apple cider vinegar

Instructions

  1. In a large bowl, combine ground chicken, chopped onion, minced garlic, and grated carrot.
  2. Add almond flour, egg, tomato paste, coconut aminos, dried oregano, dried thyme, smoked paprika, sea salt, and black pepper.
  3. Gently mix all ingredients until fully combined, avoiding overmixing to keep muffins tender.
  4. Preheat air fryer to 375°F (190°C) for 3 minutes.
  5. Lightly grease a silicone muffin tray or metal tins that fit your air fryer basket.
  6. Divide mixture evenly into 6 portions and press each into a muffin cup to form compact muffins.
  7. Place tray into the air fryer basket.
  8. Air fry for 15 minutes.
  9. If using glaze, brush tops with the ketchup mixture, then air fry an additional 3 minutes to set glaze and add caramelized flavor.
  10. Check internal temperature reaches 165°F (74°C) with a meat thermometer for food safety.
  11. Remove muffins and let rest 5 minutes before serving.
  12. To freeze: cool completely, wrap each muffin individually in plastic wrap, and store in an airtight freezer bag for up to 3 months.
  13. To reheat frozen muffins: air fry at 350°F (175°C) for 10 minutes or until heated through.
