- 1 lb (450g) ground lamb, preferably grass-fed
- 1 small onion, finely grated
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh mint, finely chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cayenne pepper (optional for mild heat)
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1 tbsp coconut flour (to help bind and keep paleo)
- 1 tbsp olive oil (for brushing)
- Paleo Tzatziki ---
- 1/2 cup coconut yogurt, plain unsweetened
- 1/4 cucumber, grated and excess water squeezed out
- 1 clove garlic, minced
- 1 tbsp fresh dill, finely chopped
- 1 tbsp fresh lemon juice
- 1/2 tsp sea salt
- Freshly ground black pepper, to taste

In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, parsley, mint, cumin, coriander, smoked paprika, cinnamon, cayenne pepper (if using), salt, pepper, and coconut flour.

Gently mix all ingredients with your hands or a spoon until well combined. Avoid overmixing to keep the koftas tender.

Divide the mixture into 8 equal portions. Shape each portion into an oblong oval kofta about 4 inches long, pressing firmly to hold shape.

Preheat the air fryer to 375°F (190°C) for 5 minutes.

Lightly brush each kofta with olive oil to promote crisping and prevent sticking.

Arrange the koftas in a single layer in the air fryer basket, spacing them apart for optimal air circulation. Cook in batches if necessary.

Air fry the koftas for 12–14 minutes, flipping halfway through, until browned on the outside and an internal temperature of 160°F (71°C) is reached.

While the koftas cook, prepare the paleo tzatziki by mixing coconut yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper in a small bowl.

Once cooked, transfer the koftas to a serving plate and let them rest for 2 minutes.
