  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh cilantro
  • 3/4 cup finely chopped roasted red bell pepper (optional for sweetness and color)
  • 6 gluten-free spring roll wrappers or vegan rice paper sheets cut into 12 squares
  • 1 large egg, beaten (for sealing and brushing; substitute with aquafaba for vegan/dairy-free)
  • Cooking spray or a little olive oil for spraying

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Heat olive oil in a medium skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until soft and translucent.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add ground lamb to the pan, breaking it apart with a spatula. Cook until browned and cooked through, about 5-6 minutes.

  9. Brush the edges of the wrapper with beaten egg or aquafaba. Fold the wrapper into a bite-sized triangular or rectangular parcel, sealing edges tightly to prevent filling from leaking.

  11. Arrange the pie bites in a single layer inside the air fryer basket. Cook for 10-12 minutes, turning halfway through, until golden brown and crisp.
