  • 1 lb (450g) beef sirloin or ribeye, thinly sliced into strips
  • 8 oz (225g) cremini mushrooms, sliced
  • 1/2 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/2 cup canned full-fat coconut milk
  • 1/4 cup raw cashews, soaked for 2 hours then blended with 1/4 cup water to make cashew cream
  • 2 tbsp olive oil or avocado oil, divided
  • 1 tbsp Worcestershire sauce (ensure gluten-free if needed)
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1/2 tsp dried parsley
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your air fryer to 375°F (190°C) for 5 minutes.
  2. In a medium bowl, toss beef strips with 1 tbsp olive oil, smoked paprika, salt, and pepper. Set aside.
  3. Spread sliced mushrooms and onions evenly in the air fryer basket. Drizzle with remaining 1 tbsp olive oil and season with a pinch of salt and pepper.
  4. Air fry mushrooms and onions at 375°F (190°C) for 10 minutes, shaking the basket halfway to ensure even cooking and crisp edges.
  5. Remove mushrooms and onions; set aside. Increase air fryer temperature to 400°F (205°C).
  6. Arrange seasoned beef strips in a single layer in the basket. Cook for 6-8 minutes, shaking or flipping halfway, until beef is browned with crispy edges but tender inside.
  7. While beef cooks, prepare cashew cream by blending soaked cashews with water until smooth.
  8. In a heatproof bowl, combine air-fried mushrooms, onions, cooked beef strips, minced garlic, Worcestershire sauce, thyme, parsley, coconut milk, and cashew cream. Stir well to combine.
  9. Return mixture to the air fryer basket. Cook at 350°F (175°C) for 7-8 minutes, stirring halfway through, until sauce thickens and ingredients are heated through.
  10. Carefully remove from the air fryer. Taste and adjust seasoning with salt and pepper as needed.
  11. Serve immediately, garnished with fresh parsley or chives if desired. Pair with cauliflower rice or steamed vegetables for a complete meal.
