  • 8 ounces cremini or white mushrooms, sliced
  • 1 cup arborio rice
  • 1/3 cup dry white wine (optional)

  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and black pepper, to taste

Instructions

  1. Preheat your air fryer to 360°F (180°C).
  2. In a heatproof, oven-safe pan or dish that fits your air fryer basket, add olive oil.

  9. Gradually add the warm broth all at once and stir to combine.
  10. Cook uncovered in the air fryer for 10-12 minutes, stirring every 4 minutes to prevent sticking and ensure even cooking.
  11. Check the rice at the end of cooking; it should be tender but slightly firm (al dente) with a creamy consistency. Add a splash more broth or water if too thick, and cook 1-2 minutes longer if needed.
