  • 1 medium head cauliflower (about 4 cups finely chopped)
  • 2 large eggs
  • 1/4 cup almond flour
  • 1/4 cup coconut flour
  • 2 tablespoons finely chopped green onions
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon baking powder (gluten-free)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for brushing or spraying)

Instructions

  1. Preheat your air fryer to 375°F (190°C) for 5 minutes while you prepare the batter.
  2. Cut the cauliflower into florets and pulse in a food processor until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture thoroughly.
  3. In a large mixing bowl, whisk the eggs until smooth. Stir in the finely chopped cauliflower 'rice', almond flour, coconut flour, green onions, parsley, garlic powder, onion powder, smoked paprika, baking powder, sea salt, and black pepper. Mix until a sticky dough forms.
  4. Scoop tablespoon-sized portions of the mixture and gently form into small balls or patties with your hands. The dough should hold together well; if it is too wet, add a little more almond flour.
  5. Lightly brush or spray the air fryer basket with olive oil to prevent sticking.
  6. Arrange the cauliflower hush puppies in a single layer in the air fryer basket, leaving small gaps between each to allow air circulation. Depending on your air fryer size, you may need to cook in batches.
  7. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy on the outside.
  8. Remove from the air fryer and let cool slightly on a wire rack. Serve warm with your favorite dipping sauce or a creamy dip.
