Ingredients

Servings12
  • 1 cup gluten-free all-purpose flour blend
  • 1 teaspoon gluten-free baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 1 large egg
  • 2 tablespoons olive oil
  • 1/4 cup milk (dairy or almond milk)
  • 3/4 cup sharp cheddar cheese, shredded
  • 1/2 cup fresh spinach, finely chopped and well-drained
  • 1 tablespoon fresh parsley, finely chopped (optional)
  • 1 teaspoon lemon zest (optional, for brightness)

Instructions

  1. Preheat your air fryer to 320°F (160°C). Lightly grease the air fryer basket or line with perforated parchment paper designed for air fryers.
  2. In a medium bowl, whisk together the gluten-free flour, baking powder, salt, black pepper, garlic powder, and smoked paprika until well combined.
  3. In a separate small bowl, beat the egg with olive oil and milk until thoroughly mixed.
  4. Pour the wet ingredients into the dry mixture. Stir gently to combine using a spatula.
  5. Fold in the shredded cheddar cheese, finely chopped spinach, parsley, and lemon zest until evenly incorporated. The dough will be slightly sticky but manageable.
  6. Lightly dust your hands with gluten-free flour and shape the dough into a log approximately 8 inches long and 2 inches wide, placing it directly on the prepared air fryer basket or parchment.
  7. Air fry the biscotti log at 320°F (160°C) for 15 minutes, until the exterior is firm and lightly golden.
  8. Remove the basket and carefully transfer the baked log onto a cutting board. Using a serrated knife, slice the log diagonally into 1/2-inch thick biscotti pieces.
  9. Arrange the biscotti slices cut-side down in a single layer back into the air fryer basket, ensuring they do not overlap.
  10. Continue air frying at 320°F (160°C) for 5-7 minutes on the first side until crisp and golden.
  11. Flip each biscotti slice and air fry for an additional 5 minutes, until both sides are evenly crisp and toasted.
  12. Remove the biscotti from the air fryer and allow them to cool completely on a wire rack before serving. The biscotti will become crunchier as they cool.
  13. Store cooled biscotti in an airtight container at room temperature for up to 4 days, or freeze for extended freshness.

Storage

Store leftover Air Fryer Savory Cheddar and Spinach Biscotti in an airtight container in the refrigerator for up to 3 days. Cool the food before sealing so excess steam does not soften the texture.
