Ingredients

Servings4
  • 1 lb (450g) lean venison steak, trimmed and cut into 1/2-inch bite-size strips
  • 1 tbsp coconut aminos (paleo soy sauce alternative)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp ground black pepper
  • 1/4 tsp sea salt
  • 1/4 tsp cayenne pepper (optional, for mild heat)
  • 1 tsp olive oil or avocado oil

Instructions

  1. In a mixing bowl, combine coconut aminos, smoked paprika, garlic powder, onion powder, black pepper, sea salt, cayenne pepper (if using), and olive oil.
  2. Add the venison strips to the bowl and toss well to evenly coat all pieces with the marinade.
  3. Cover and marinate in the refrigerator for 5-10 minutes to infuse flavors (do not marinate longer than 30 minutes to maintain optimal texture).
  4. Preheat your air fryer to 160°C (320°F) for about 3 minutes.
  5. Arrange the venison strips in a single layer in the air fryer basket, avoiding overlap to ensure even cooking. Cook in batches if necessary depending on your air fryer size.
  6. Air fry for 10 minutes, then carefully flip each piece and cook an additional 8-10 minutes until jerky bites are firm with slightly crispy edges yet tender inside.
  7. Remove the jerky bites and let them cool slightly; they will crisp up more as they rest.
  8. Serve immediately or store in an airtight container at room temperature for up to 3 days.

Recipe guidance

Crispiness Control

Pat the lean venison steak dry, avoid crowding, and use only a light coat of oil or sauce before cooking. Add wet sauces near the end when you want the outside to stay crisp.
